Ladies and Gentleman. For the 8th edition of our Monthly Dinner series, Chef Ryan Jaronik is literally ripping pages from Auguste Escoffier's cookbook. The numbers below refer to the actual recipe numbers in his seminal cookbook of 2,973 recipes.

To crib from Wikipedia...
Georges Auguste Escoffier (28 October 1846–12 February 1935) was a French chef, restaurateur and culinary writer who popularized and updated traditional French cooking methods. He is a near-legendary figure among chefs and gourmets, and was one of the most important leaders in the development of modern French cuisine.

Accompanying your fine early-20th century fare will be one of our favorite films that was just re-released by Criterion, Last Year at Marienbad (1961). A live DJ will mix large amounts of the film's soundtrack with large amounts of baroque, neo-classical and proto-psychedelic sounds. We shall overwhelm.
