Ruben Sanz Ramiro selects our wines and advises us on our Tasting
Menus as well as our upcoming Video, Dance, and 12-course Meal
Performance: The Migration Opera.
Selecting wine for a restaurant with a small wine list and an
eclectic menu is a great test of a sommelier's skills. In our
case, Ruben's choices are informed by a sympathetic palate that
pairs great tasting, sophisticated wines with quality foods at
good value.
He can also be found at The
Monday Room in SoHo (adjacent to Public)
where he is both the sommelier and Master of Ceremonies. Previously,
he worked outside of London at The
Fat Duck, regulary rated as one of the best restaurants
in the world.
He received a restaurant management degree from Escola Superior
d'Hoteleria de Catalunya in Barcelona. He is currently studying
at the Wine
and Spirits Education Trust.
